So, I won the hand, because I played it right. Then again, did I? Should I always, or often make this play against someone who just sat down, about whom I have little to no information?

At the level you’re playing at? Absolutely. The chances of it not being right are minimal, though of course still possible. In the case of someone sitting down, you should assume they’re neither a donk nor another kind of exceptional player–you should assume they’re average FOR THE LEVEL YOU’RE PLAYING AT.
